Chocolate Chip Cookies

I love to make these on a Sunday when I’m preparing myself for the week ahead. These are a great healthy snack to have on the go or when your craving a late night sweet treat. I pair mine with a warming cacao hot chocolate to wind down before I go to bed.

Ingredients:

1 cup buckwheat flour
1 cup rolled oats
1/2 cup coconut sugar
1 tablespoon cinnamon
1 tablespoon lions mane mushrooms
1 egg
1/4 cup date syrup
1/2 cup melted coconut oil
1/3 cup dark chocolate chips
1/3 cup desiccated coconut

Method:

1. Preheat oven to 180 (160 fan forced) and line a baking tray with baking paper

2. Mix flour, oats, coconut sugar, cinnamon and lions mane mushroom together in a large bowl

3. In a seperate medium sized bowl combine date syrup, an egg and the melted coconut oil and whisk until everything is combined

4. Mix the wet ingredients into the dry ingredients and stir until everything is combined

5. Mix through the dark chocolate chip cookies and desiccated coconut

6. Roll out medium sized balls of the cookie dough mixture and place on the baking tray

7. Press each ball down gently before placing them into the oven to cook for 6-8 minutes

8. Cool for 5 minutes and enjoy!
